Name: Beef barley soup Ready in: 1 1/2 hour Servings: 10 Ingredients: 1 lb. ground beef 1/3 cup pearl barley 1 lb. mushrooms (sliced) 1 cup diced onions 1 cup diced celery 1 can diced tomatoes 1 tsp. dried basil 1 quart beef broth 8 cups of water Salt and pepper to taste Directions: 1. In a large soup pot, bring beef, broth and water to a boil. 2. Reduce heat and cover. 3. Cook for 30-40 minutes or until ready. 4. Add barley, mushrooms, onions, celery, tomatoes and basil. Stir and combine. 5. Cook for 20-30 minutes. |
